This amazing recipe is based off one I found long ago, and through the years created my own version of them! I can't even remember what the original recipe called for, come to think of it! Nonetheless, my version has proven to be quick, easy, and oh so delicious!
If you ever find me at an event in which I'm hosting/co-hosting, I make it my goal to always bring this treat. And I'm often asked, "Where did you buy these?!" They're that good! The best part is that they are also nutritious, plant-based, and allergy friendly. So no gluten, processed sugar, dairy, soy...and if you have a nut allergy, you can swap the almonds for peanuts (psst, peanuts aren't nuts, they're actually legumes!)
A few great ways to incorporate this treat could be as:
- Apart of your breakfast
- a Pre-workout treat
- an Afternoon pick-me-up
- an after dinner dessert
- your contribution to your next pot luck, family/friend gathering, or even holiday bake exchange ;)
- 1 cup cacao
- 1 cup pitted dates
- 1 cup almonds (or peanuts)
- 1/4 cup shredded coconut (you can always sub this for a different flavor or fruit of your choice, I've swapped with mint to make mine taste like Thin Mints!)
- 2 tsp water
Blend all together in food processor or high powered blender. Scoop out into desired size and roll into a ball. Refrigerate and enjoy!
